Sweet potato, Kale, Tempeh, and Vegan Feta Tacos

Ingredients:

  • Perfectly roasted sweet potatoes

  • BBQ tempeh

  • Garlicky Kale:

    • 3 cloves garlic

    • 2 cups of kale

    • 1 tbsp garlic powder

    • 1 tbsp lemon juice

    • Coconut oil

    • Salt

  • Hummus

  • Almond, chickpea or corn based tortillas

  • Plant-based feta

Directions:

  1. Prepare the sweet potatoes (see recipe here)

  2. Prepare the BBQ tempeh

  3. For the kale, rince it and heat up a pan with a little bit of coconut oil

  4. Chop the kale and mince the garlic

  5. Place both in the pan and keep stirring

  6. Add a little bit of salt and let cook for about 5 min while stirring occasionally

  7. Add the garlic powder and lemon juice

  8. Warm up the tortillas and add about 1 tbsp of hummus on it.

  9. Add the tempeh, the sweet potatoes, the kale, and add a few small pieces of plant-based feta on top.
