Sweet potato, Kale, Tempeh, and Vegan Feta Tacos
Ingredients:
BBQ tempeh
Garlicky Kale:
3 cloves garlic
2 cups of kale
1 tbsp garlic powder
1 tbsp lemon juice
Coconut oil
Salt
Hummus
Almond, chickpea or corn based tortillas
Plant-based feta
Directions:
Prepare the sweet potatoes (see recipe here)
Prepare the BBQ tempeh
For the kale, rince it and heat up a pan with a little bit of coconut oil
Chop the kale and mince the garlic
Place both in the pan and keep stirring
Add a little bit of salt and let cook for about 5 min while stirring occasionally
Add the garlic powder and lemon juice
Warm up the tortillas and add about 1 tbsp of hummus on it.
Add the tempeh, the sweet potatoes, the kale, and add a few small pieces of plant-based feta on top.
