Healthy Vegan Energy Balls

Who loves eating snacks throughout the day and feels a little guilty about it? Definitely me. If it’s the case for you too, fear no more. I got you covered.

This recipe is super easy and quick to make. It’s also healthy and delicious!

It only requires 5 ingredients and it takes 5 min to make.

These treats are a great source of fiber and have a variety of vitamins and minerals.


Ingredients :

  • 1 cup of rolled oats

  • 1/2 cup of cacao nibs

  • 1/2 cup of shredded coconut

  • 8 very soft medjool dates

  • 1/4 cup of crunchy peanut butter

Directions :

  1. Mash the dates to make a paste. (see notes)

  2. Place all of the ingredients in a bowl

  3. Mix well until it’s all blended and not crumbly anymore

  4. Form little balls with your hands

  5. Place in the refrigerator for a little bit and enjoy!

Notes :

  • This recipe makes more energy balls than the number showed on the photos. It makes about 18-20 according to their size.

  • You don’t have to put them in the fridge if you want to eat them right away. But I would still recommend it if you can.

  • If your dates aren’t soft enough to make a paste out of them, place them in a bowl with a little bit of water and put it in the microwave for 30 sec-1 min depending on the temperature. If you can mash them with a fork, they’re good.
